At Bagel Bike our secret ingredient is time. We use a two-day production process which allows for a long, slow, cold fermentation of the dough, bringing out subtle and complex flavors. On the second morning, the bagels are boiled and baked in the wee morning hours--steps that create that classic crisp crust and chewy interior--and then put in the bike to bring directly to you.
